Sourced high in the mountains of Tolima, Colombia, our Arabica coffee is grown at 1,500 to 1,850 meters, then carefully roasted in Miami to bring out its full character. One origin, three roasts, every lot independently tested.

The origin

One origin.
Tolima, Colombia.

Tolima sits in the central Andes of Colombia, a department of steep valleys, fast rivers and small farms working the slopes between them. It is one of the country’s great coffee regions, and it is the only place our coffee comes from.

Every bag of The Ultimate Brew is single origin. We do not blend lots from different countries or regions to hit a price point, so the cup tastes of one place, and the report behind the QR code describes one lot from that place.

Altitude

Grown at
1,500 to 1,850 meters.

High on the mountainside the air is cooler and the coffee cherry ripens slowly. That slower maturation can bring a more complex, aromatic and balanced cup, with a smooth taste and refined acidity, which is why high-grown Arabica is prized.

Our coffee grows between 1,500 and 1,850 meters, the band Colombian growers call high altitude. It is harder farming. The slopes are steep, the cherries are picked by hand, and each tree yields less than it would on flat, lowland farms. The cup is the reason to do it anyway.

Processing

Washed, then
dried with care.

Ours is a washed coffee. After picking, the fruit is removed from the bean and the remaining sticky layer is fermented away and rinsed off with water, before the beans are dried.

Washing produces a clean, bright cup that shows the character of the place rather than the fruit it was dried in. It also matters for what comes later: careful drying and dry storage are the first defense against the molds that produce mycotoxins, long before a laboratory ever sees the lot.

The roast

Roasted in Miami.
Three ways.

The green coffee comes to Miami, where it is roasted into three expressions of the same bean: a smooth Medium, a bold Espresso and a rich Dark. Same origin, same altitude, same process, three different roast profiles.

Then, before any of it ships, a sample from every lot goes to an independent third-party laboratory and is tested for mycotoxins, heavy metals, pesticides and glyphosate. The report for your lot is one scan away on the side of the bag.

The roasts

How to brew

Grind fresh. Then let the roast lead.

Every bag is whole bean, so the grind is yours to set. These are starting points, not rules. Adjust to taste.

Medium Roast

Drip and pour-over

Medium grind, about the texture of sea salt. Use around 1 part coffee to 16 parts water, with water just off the boil at 195 to 205°F. Aim for a three to four minute brew. This is where the honey and red apple come forward.

Espresso

Espresso and moka pot

Fine grind. Start at 18 grams in and 36 grams out, pulled in 25 to 30 seconds, and adjust the grind until the shot runs in that window. Holds up beautifully under milk. It also makes a strong, chocolatey drip.

Dark Roast

French press and cold brew

Coarse grind. For the press, 1 part coffee to 15 parts water, four minutes, then plunge. For cold brew, 1 to 8 with cold water, 12 to 18 hours in the fridge, then strain. Cocoa and roasted almond, with the body to carry ice.

Care

Keeping it fresh.

    Reseal after each use

    The zipper is there for a reason. Press the air out and close it every time. Oxygen is what dulls a roast.

  2. 02

    Store cool and dark

    A cupboard away from the stove and the window. Heat and light speed up staling. Do not refrigerate: condensation does more harm than good.

  3. 03

    Grind just before brewing

    Whole beans hold their aromatics far longer than grounds. Grind what you need, when you need it.

  4. 04

    Best within four months of roast

    The roast date is printed on every bag. It will still be good after that, but this is the window where each roast tastes the way we intended.
